Happy National Pina Colada Day!!!!
I don’t know who declared this day as national Pina Colada day, but I am glad they did!!! I am a big fan of Pina Colada’s but I don’t ever really drink them unless I am on vacation or at a nice dinner on the beach… I mean of course one on the beach because what is a better combo than sipping a Pina Colada on the beach!!!
Just got back from Watercolor, Florida and I am currently trying to get myself back on a beach right now… Can I also preorder a Pina Colada to be waiting for me?! That would be too good to be true!!!!
One of my interns was looking for fun days in the year that we could celebrate… because we ALWAYS try to find reasons to celebrate and I couldn’t tell you how happy I was that this day was so close!!!
Now of course I am a HUGE fan of the original Pina Colada, because it’s such a classic, but I found this cute, fun recipe that puts a little twist on the original Pina Colada!!!
Of course, once I found this recipe, I HAD to try it out before I shared it with yall, and IT IS SO YUMMY!!!
I cannot wait to make it today… ya know because it’s a national holiday, I have to do it ;-)
So here is the yummy recipe:
- 8oz Malibu® Coconut Rum
- 12oz frozen strawberries, semi thawed
- 1/2 cup 7UP®
- 10oz pineapple juice
- 8oz cream of coconut
- 1 banana
- 2 cups crushed ice
- fresh pineapple wedges, for garnish
In a blender, combine thawed strawberries in syrup, Malibu® Coconut Rum and 7UP® then blend until smooth. Run through a fine mesh strainer to remove strawberry seeds or simply pour in another container and set aside. Rinse blender to remove mixture. Combine cream of coconut and pineapple juice in blender then blend for a minute or so until mixed well. Pour into separate cup and set aside. Place ice in blender with banana and blend well. Add pineapple/coconut mixture to banana/ice mixture and blend again until frothy and smooth; set aside.
Fill glass 2/5ths the way up with strawberry rum mixture. TILT the glass and ever so gently and slowly pour in white pineapple coconut mixture into tilted cup--making sure the mixture drips down the side to the bottom. Strawberry mixture will rise to the top. Serve chilled with a straw and pineapple chunks to garnish.
It only takes about 5 minutes to make and the serving size is roughly 4-6 glasses!!
