Pumpkin Spice, Pumpkin Pancakes!

Yes, It's true...

I am a Pumpkin Spice Latte addict!!!!!


The day Starbucks brought back the PSLs, I think I just about died of excitement! Okay, maybe that's a slight exaggeration, but still. It just brings back holiday memories, and what better feeling is there than standing out in the cold wearing boots and an over sized scarf while sipping your pumpkin spice latte? 


And along with my PSL obsession comes multiple cookbooks (yes, I said that) of everything pumpkin recipes! Though, a lot of those get forgotten because I have so many ideas and recipes saved on my Pinterest. One of my favorite recipes is a simple pancake recipe made with Pumpkin Puree. It's a quick and easy recipe, and my family loves it too! 



Try it out for your next brunch party! 



  • 2 cups flour
  • 1/3 cup sugar
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 2 tablespoons pie spice
  • 1 1/2 cups milk
  • 2 eggs
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla
  • 1 cup pumpkin puree
  • whipped cream pecans, and maple syrup, for topping


  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, cloves, and nutmeg. In a medium bowl or measuring cup, whisk together the milk, eggs, oil, vanilla, and pumpkin.

  2. Pour the wet ingredients into the dry ingredients, and stir until the batter comes together (a few lumps are okay). Let the batter rest 5-10 minutes.
  3. Heat a large skillet or griddle over medium heat. Pour the batter by 1/4 cup scoops onto the skillet and cook 3-4 minutes, or until large bubbles appear. Flip and cook 2-3 minutes on the other side. When ready to serve, top with whipped cream, pecans, and maple syrup.
