If I were a snack, I feel like I would be one of these little guys...simple, sweet, and a little burst of energy to the day. I think that's why I love these so much! Because they remind me of me!!
If only they had a little caffeine, then they'd be perfect.
But, these are the perfect weekend activity for me and the girls. My mini me's love picking out their favorite mix-ins and making their own special batch. Plus, they are super simple to make in bulk and throw in my girls' lunch boxes for school (while keeping a few for myself of course).
1 cup of Rolled Oats (I use Bob’s Red Mill Gluten Free)
2 tablespoons “power mix-ins” (chia seeds, flaxseeds, hemp seeds, etc.)
1/2 cup nut butter of choice (almond butter is my go-to)
1/3 cup sticky liquid sweetener of choice (honey or maple syrup)
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
and then a 1/2 cup of your mix-ins of choice and mix it all together! You can add cranberries, white chocolate chips, coconut, mini marshmallows, almonds... You can keep it healthy!.... Or not ;-)
Now, go enjoy your little ball of energy!!
